Peterson could have added the onions and celery, I don't remember. Using an egg slicer or a knife, finely chop the boiled eggs. Add the mayonnaise, chives, mustard, salt and pepper and mix until blended. Spread the egg mixture on the bread. I had a surplus of avocados after purchasing too many for an event.
